Cat owners may not understand why gardeners want to prevent cats gaining access to their gardens, but there are justifiable reasons, it is not always that gardeners hate cats. Cats are ferocious hunters and can also be very destructive.</p>
<p>For example, my next door neighbour had a cat, but felt lonely when her daughter moved away, so she permitted the cat to to have young. Now she has six cats. But cats are not like dogs. My dog stays in my garden not upsetting anyone apart from by barking if a stranger walks past the gate However, that is his job and he is not only telling me but the neighbours as well. These six cats do not stay in their own garden though, so we have all acquired six cats whether we want them or not.</p>
<p>The first problem I became aware of was that birds stopped coming to pick my dog&#8217;s bowl clean in the afternoon. Then I saw a cat eating a lizard, a beautiful nine inch specimen and then I remembered not seeing a lot of lizards lately. There is one lizard, the Tokay, that they have completely wiped out &#8211; I used to listen to them calling at night, but no more.</p>
<p>Cats also dig up flowers when they defecate and use furniture as clawing boards, so I do not want these destructive animals in my garden. But how do you keep cats out of your garden?</p>
<p>Walls are rarely protection against cats, but cats will often prowl along the bottom of walls and if they come across a hole, they will probably go in out of inquisitiveness, so repair all low-level gaps in your fences. There is not much you can do about the top of your wall other than putting broken glass or electrified wiring up there, but that is not a good idea.</p>
<p>Some dogs are good at keeping cats away, but not all. My dog got a nasty and totally unexpected swipe of claws across his nose one day. He used to chase them when they were kittens, but now they have grown up, he only growls to tell me a cat is on the property. I cannot blame him.</p>
<p>In Australia, many gardeners reckon that transparent bottles full of water bewilder cats, so they stay away, but in my experience, only Australian cats react in that way.</p>
<p>A row of prickly bushes or flowers along the base of a wall where cats regularly come in works. At the bottom of high walls too, where the cat cannot see them until he is on top of the wall. I often see cats mewing (in frustration, I hope) on the top of one of my walls. The only way down is to go back.</p>
<p>If you still cannot keep cats out, then you will need to train them not to come in. This is easiest accomplished by using a few methods. If cats are using your flower pots are conveniences, try smearing the pots with pepper, lavender, lemon, mustard, or tobacco. Or you could leave a mothball in each pot. Some of these will have the desired result for you, others will not.</p>
<p>Then there are industrial repellents, but I do not want to resort to them. However, if you have a big garden and a big problem, it might be the only way. There are also high frequency sound emitters. Humans cannot hear them, but almost all animals can, so I think that that is deplorable as well.</p>
<p>At night, motion-activated exterior lighting is a great shock to cats. Cats have very sensitive night vision so a quick flash from a floodlamp really puts them off a garden.</p>
<p>The best deterrent is water. You can buy motion-activated sprinklers, which are excellent at keeping cats out of your garden, but I like to sit in my office or in the garden with a powerful water pistol and squirt them by hand. The lizards have not come back yet, but nor do the cats quite so often either.</p>

<p>Christie Brinkley: is a strict vegetarian, who has also eradicated all types of junk food from her diet. She snacks on sweet potatoes and if she puts on a couple of pounds, she goes on a crash diet of fruit juices.</p>

A lot of people in regions where the climate permits are doing a great deal of cooking outside in a carbon copy of an indoor kitchen, but without all the walls.. If you plan the outdoor kitchen carefully, you will be able to use it in the rain too. I find it lovely not to have kitchen smells in the house and cooking out of doors is a good experience as well.</p>
<p>If it gets nippy in the evenings then you can think about buying some patio heaters. They are not expensive to buy or to run and one standard patio heater can keep quite a group of people warm. (By the word &#8216;standard&#8217; here, I mean upright, like a lamp post).</p>
<p>Lighting is the last large consideration in the list when choosing garden furniture. There are actually two kinds of garden lighting to mull over: lighting to see by and lighting to lure insects away. Again, you could use standard lamps to light up your patio. They shine their light far enough so that you can still look at your garden after dark or you could have individual wall light on dimmers.</p>
<p>The one light I would definitely have is a mosquito lantern. Hang this away from where you sit, because they do attract insects to them which they then electrocute with a pleasing zap.</p>

<p>One aspect of landscape lighting is called accent lighting. This type of lighting is employed to subtly light up bushes or flowers along with other things. You can also light up a snow storm or rain, it gives a beautiful effect, but this takes more powerful lighting such as flood lights.</p>
<p>The point is that you do not need to have the beauty of your garden on display for only the day light hours, you can also get great enjoyment out of it in the evenings and even at night; in the summer and in the winter.</p>
<p>There is a vast choice of landscape lighting. For instance, there are lamps, lanterns, floodlights and spotlights and they can be powered by mains electricity or by the sun. Clearly, if you want to use mains electricity, you will have to have an electrician lay armoured cable in your garden, which can be costly and is more or less permanent.</p>
<p>The alternative is solar powered lighting, which is impermanent. If you put it somewhere and then change your mind, you can move it yourself and there are no electricity running costs. Solar powered light fittings are more expensive than standard ones, but all in all, taking into account the electrician&#8217;s fees and the on-going electricity bill, solar powered devices work out cheaper. Plus, you will be doing something for the environment that every gardener is doing his or her best to protect.</p>
<p>This article is not about security lighting, but landscape lighting does have a spin-off by adding extra security to your property. Before buying any landscape lighting, you ought to have a good idea of what you want.</p>
<p>There are several ways of going about this. You could first of all draw a plan of your garden and photocopy it a couple of times so that you can commit your thoughts to paper.</p>
<p>You could take a walk around your local neighborhood and pick up ideas by observing neighbours&#8217; gardens. You could go look at how the council lights its parks and public buildings and you could buy a few landscaping magazines to see the latest items on the market.</p>
<p>It is also worth going to a few gardening centres, because they will also be showing off their merchandise to their full advantage. As you get ideas, pencil them in on one of your photocopies. If you want to test a few ideas very approximately, you could place a suitable flashlight under a bush that you think would benefit from landscape lighting and study it. If you do not like it remove it from your drawing and try something else.</p>

<p>My father used to say: &#8220;If you can not afford the tyres, then do not buy the car&#8221;.</p>
<p>That has always seemed a decent rationale for running my financial life and has always stood me in pretty good stead. Saving is a good habit to get into and ought to be encouraged in children even to the point of letting kids purchase Premium Bonds (in the UK), which is nationalized gambling (the combined interest on the bonds nationally is given out every month as prizes).</p>
<p>The next question is how much do you need to be safe. Well, there is no real answer to that question. At least not in real monetary terms because we all have different financial requirements and responsibilities, but you could say enough to keep you &#8216;in the lifestyle that you would expect&#8217; for at least three months. Perhaps even six months, if you do not have a right to social security payments in the country where you live. It would be lovely to have a year&#8217;s worth would it not?</p>
<p>So, if you can do that, why have a credit card, you may be wondering. Well, a credit card saves you having to carry your gold around with you like the rich men of old had to and it makes Robin Hood&#8217;s task more difficult too.</p>
<p>It also makes financial sense to get thirty days free credit on purchases when you are earning thirty days interest on your money. Credit card purchases more than a sure amount normally confer additional rights on the purchaser too &#8211; benefits like free insurance against loss for a year.</p>
<p>If however you are only beginning down the road to financial independence, the first thing you should concentrate on is paying off your credit card debts. Mortgages are a financial tool that can save you tax, so do not worry about them too much, just make certain that you never- ever &#8211; miss a payment. In fact, stay one or two payments in advance, if you can.</p>
<p>I know that this all sounds terribly simple and I know that you are thinking that it is not, but you are wrong. It is easy and the earlier you begin, the easier it is. Learn to put money away each week. If it is too late for you, teach your children. You might think that the banks are ripping you off &#8211; I think they are too &#8211; but what else can you do?</p>
<p>Put money away each and every week and be proud to see the amount rising. Be proud that you can afford a new set of tyres, but hoping that you do not have to buy them is all right too.</p>

<p>The best method of going about making something beautiful out of your backyard is planning and perhaps the easiest way of planning is to create a plan or a drawing of your garden.</p>
<p>If you choose this course, the first thing you will have to do is get some graph paper and plot the exact dimensions and form of your garden onto it, with as large a scale as will fit on the sheet of graph paper.</p>
<p>After you have completed that, mark in unmovable items like a brick shed, a drain or septic tank, a fish pond and doorways et cetera. Then you should photocopy it, maybe five or ten times. This is so that you can make mistakes, change your mind or even permit everybody in the household to make their own design from their own investigations and imagination.</p>

<p><b>Poaching:</b> boil 40mm water in a frying pan; add a teaspoon of salt and a teaspoon of vinegar. Crack egg into cup, inspect and tip into water. Turn down the heat. Gather the white around the unbroken yolk with a spoon and simmer for 3-4 mins. Lift out with a fish slice, drain and serve on hot buttered toast.</p>
<p><b>Scrambling:</b> beat the eggs well; add salt, pepper to taste and a dash of milk. Melt enough butter to cover the bottom of a shallow pan. Heat the eggs slowly, stirring continuously. Cook in a basin floating in boiling water, if preferred. Serve when almost completely set, in about 5 mins.</p>
<p><b>Fried:</b> Melt enough fat to easily cover the bottom of a shallow pan. Tip egg in gently and gather the whites around the yolks. When the white has set, baste the yolk to taste and remove whole with a draining spoon.</p>
<p><b>Baking:</b> lightly grease a fireproof dish and slide eggs into it. Sprinkle with salt, pepper and butter. Bake in a moderate oven and serve in the same pan after the whites have set.</p>
<p><b>Omelette:</b> buy a pan and keep it only for omelettes! The base should be smooth and clean. Allow two eggs per person; beat lightly and add salt and pepper to taste. Heat enough butter to cover the base of the pan. When the fat is hot, pour in the eggs; as it sets, raise the handle up and draw set mixture up, allowing the liquid egg to run down onto the hot pan. When all is set, tilt the pan forward and roll the omelette over. Serve immediately on a hot plate. It can be filled with almost anything, before being rolled over.</p>
<p><b>Pouring Custard:</b> beat 2-3 eggs for every one pint of milk lightly. Heat the milk and pour gradually over the eggs; add sugar and flavouring to taste; cook in a double pan or jug and hot water until the required consistency has been achieved. If it is not to be served immediately, pour a thin layer of water onto it to stop a skin forming.</p>
<p><b>Baked Custard:</b> start as above and then transfer the custard into a greased dish; sprinkle lightly with nutmeg and place dish in water to halfway up its sides. Bake at 350 F for 35-45 mins; test its solidity by inserting a knife &#8211; it should be clean on removal.</p>
<p><b>Steamed Custard:</b> as baked custard, but cook in a steamer or pan of boiling water. The cooking time is about the same too.</p>
<p><b>Custard Tarts:</b> pour pouring custard into unbaked pastry cases and bake in the oven for 40-50 minutes. A little jam can be placed at the bottom of the pastry case first, if preferred.</p>

<p>Cheeses are manufactured from milk which has been naturally or artificially turned sour. The first method is achieved by standing the milk in a warm place and allowing natural, beneficial bacteria to convert the milk&#8217;s natural sugars into lactic acid. The second method is effected by adding an agent, usually rennet.</p>
<p>Salt and colouring and frequently put in too. The whey is then allowed to drain away and the curds are pressed into moulds where they are kept until ripened or cured. Some cheeses, usually hard ones, are subjected to pressure; soft cheeses are not. Curds are ripened or cured by various means. The way it&#8217;s done, the quality of the milk, the breed of cow, sheep or other animal and its pasture, and the type of bacteria all govern the end result.</p>
<p>Some local conditions are unique and those areas produce cheeses that are not successfully copied anywhere else: for example Roquefort and Edam, although factories do try. They even have some success, just think most of the world&#8217;s Cheddar cheese now comes from the USA and Canada.</p>
<p>The constituents of cheese are typically: 33% fat, 33% protein and 33% water with salt, colouring, sugar etc making up the rest. These percentages vary from region to region as some producers use full-cream milk, others skimmed-milk and yet others add extra cream. Some add extra sugar, most do not. All cheeses have a high calcium content and may be considered &#8216;concentrated milk&#8217; and stored as such.</p>
<p>Many people say that cheese must not be kept in a fridge and although storing in water, as for milk, is not a viable option, a cool larder is certainly ideal. Try the traditional method of suspending it from a hook in muslin in a cool, breezy place. If it is hot, moisten the cheesecloth with water to which a little vinegar has been added.</p>
<p>in Europe, cheese is frequently served with a salad or/and bread and is often presented after or instead of the dessert course. Hard cheese can be nigh-on impossible for children to digest and grating it first will make it more edible for them. After being grated the cheese can be scattered on vegetables or fish soups or sauces; combined with egg, pasta, rice and oatmeal dishes; put on baked potatoes or pastry; toasted on bread or put in sandwiches or salads.</p>
<p><b>How To Cook Cheese:</b> A little known fact is that many people find cooked cheese indigestible and the reason lies in its structure. Here is why: cooked starch can be digested by the saliva in the mouth but other foods must pass to the stomach or intestines for this process. They are, however, broken up in the mouth. Digestion of protein begins in the stomach and is completed in the small intestine, while fat is not rendered soluble until it reaches the small intestine.</p>
<p>Cheese has a high fat and protein content, but when melted, the fat frequently covers the protein and stops the digestive juices reaching it in the stomach. This results in, its digestion is delayed until the fat has been absorbed by the intestines. Cheese can be made more digestible in the following way:</p>
<p>a] Combining it with some starchy foodstuff, since the starch will absorb the fat, not allowing it to cover the protein.</p>
<p>2] Using seasoning: Cayenne Pepper or mustard will irritate the intestinal lining, causing the release of extra digestive juices.</p>
<p>3] Cooking quickly at high temperature. This prevents the protein from becoming tough and stringy and therefore, harder to digest. Add cheese late to sauces.</p>
<p>4] Adding alkali: so, generous pinch of Bicarbonate of Soda per 75g (3 ozs) will help neutralize the fatty acids and make the proteins easier to digest.</p>

<p><u>EGGS: Part 1</u></p>
<p>Eggs can be fresh or dried, the latter being only hens&#8217; eggs without the shell and water. Dried egg should be stored in a cool, dry place &#8211; not in the fridge! Store eggs for a few days &#8211; up to a week &#8211; in a cool place away from strong-smelling foods. An egg stand is ideal for this. If the eggs are dirty, wipe them clean &#8211; washing will remove the natural oils which help preserve the eggs.</p>
<p><b>Pickled Eggs:</b> eggs laid in the Spring keep better than those laid in other seasons. Eggs that can not be cleaned-up, must be rejected. Waterglass or the special preparations should be used. if an egg floats to the surface, use it immediately. Try to maintain the ambient temperature between 2 and 8 degrees C and they should remain edible for 6 to 9 months.</p>
<p><b>Preparing Eggs for Cooking:</b> break each egg separately into a cup, before adding it to the other ingredients to ensure it is not &#8216;off&#8217;. If you wish to separate the white from the yolk, tip the contents back and forth between the two eggshell halves and the white (albumen) will run off. Beat eggs with a whisk or a fork in an appropriate bowl; whip egg whites with a knife on a dinner plate &#8211; a pinch of salt will help.</p>
<p>Raw eggs used to be prescribed for invalids as they are easily digestible, but this not recommended these days due to the ubiquity of salmonella and other diseases. One method, retold here for the curious was to strain a beaten egg into a mug and slowly add a cup of hot milk (or tea, coffee or lemon water; add sugar to taste. Sherry was often added too.</p>
<p><b>Cooking Eggs:</b> eggs should be cooked very slowly because the albumen cooks at a temperature which is lower than that of boiling water and becomes &#8216;tough&#8217; at higher temperatures. By the same token, if you use raw egg to thicken a sauce and the liquid is allowed to boil, the sauce will &#8216;curdle&#8217;, i.e. the egg will solidify into small specks, spoiling its texture.</p>
<p><b>Coddling:</b> produces easily digested egg-whites, making it an ideal meal for invalids and children. Lower the eggs into 75mmof boiling water; replace the lid and remove from heat. Let it stand for: 7 mins for medium-, 5 mins for soft- and 20 mins for hard-boiled eggs .</p>
<p><b>Boiling:</b> lower fresh eggs gently into 75mm 3&#8243; boiling water with a spoon. Replace the lid and boil gently for 3-3&#8243; mins for soft-, 4-5 mins the medium- and 10 mins for hard-boiled eggs.</p>
<p>Place in egg cups and tap the shell to crack it. Allow the steam to escape, which will prevent the egg further cooking. For sandwiches, salads etc,. boil the egg for 12 mins and plunge into cold water. This allows the shell to be easily removed and discourages a black ring around the yolk.</p>

<p>Cheeses are manufactured from milk which has been naturally or artificially turned sour. The first method is achieved by standing the milk in a warm place and allowing natural, beneficial bacteria to convert the milk&#8217;s natural sugars into lactic acid. The second method is effected by adding an agent, usually rennet.</p>
<p>Colouring and salt are usually added too. The whey is then drained off and the curds are pressed into moulds where they are ripened or cured. Some cheeses are subjected to pressure; soft cheeses are not. Curds are ripened or cured by a variety of means. The method, the quality of the milk and its pasture, the breed of cow, sheep or other animal and the type of bacteria all govern the final product.</p>
<p>Some local conditions are unique and those areas produce cheeses that are not successfully reproduced elsewhere: for example Gruyere and Camembert, although factories do try. They even have some success, as most of the world&#8217;s Cheddar cheese now comes from the USA and Canada.</p>
<p>The constituents of cheese are typically: 33% fat, 33% protein and 33% water with salt, colouring, sugar etc making up the rest. These percentages do vary from area to area as some manufacturers use full-cream milk, others skimmed-milk and yet others add extra cream. Some add some extra sugar, although most do not. All cheeses have a high calcium content and should be considered as &#8216;concentrated milk&#8217; and stored the same way.</p>
<p>Many people say that cheese should not be kept in a fridge and while storing in water, as for milk, is not a viable option, a cool larder is definitely ideal. Try the traditional method of hanging it up in cheesecloth in a cool, breezy place. If it is hot, dampen the cheesecloth with water to which a little vinegar has been added.</p>
<p>Cheese is typically served in Europe with a salad or/and bread and is often served after or instead of the sweet course. Hard cheese can be difficult for children to digest and grating it first will make it more palatable to them. Once grated the cheese can be sprinkled on vegetable or fish soups or sauces; added to egg, pasta, rice and oatmeal dishes; put on baked potatoes or pastry; toasted on bread or put in salads and sandwiches.</p>
<p><b>How To Cook Cheese:</b> A not well known fact is that a lot of people find cooked cheese indigestible. The reason lies in its molecular structure. Here is why: cooked starch can be digested by the saliva in the mouth but other foods must pass to the stomach or intestines for this process. They are, however, broken up in the mouth. Digestion of protein begins in the stomach and is completed in the small intestine, while fat is not rendered soluble until it reaches the small intestine.</p>
<p>Cheese has a high fat and protein mixture, but in melting, the fat frequently covers the protein and stops the digestive juices reaching it in the stomach. Therefore, its digestion is delayed until the fat has been absorbed in the intestines. Cheese can be made more digestible in the following way:</p>
<p>a] Cooking it with some starchy foodstuff, since the starch will absorb the fat, not allowing it to cover the protein.</p>
<p>2] Adding seasoning &#8211; Cayenne Pepper or mustard will irritate the intestinal lining, thus causing extra digestive juices to be released.</p>
<p>3] Cooking briskly. This has the effect of preventing the protein from becoming tough and stringy and therefore, harder to digest. You could also add the cheese late to sauces.</p>
<p>4] Adding alkali. A large pinch of Bicarbonate of Soda per 75g will help neutralize the fatty acids and make the proteins more easily digestible.</p>

<p><b>Poaching:</b> boil 1.5 inches (40mm) water in a frying pan; add a teaspoon of salt and a teaspoon of vinegar. Crack an egg into a cup, check and pour into boiling water. Turn down the heat. Gather the white around the unbroken yolk with a spoon and continue to simmer for another 3-4 mins. Lift out with a draining spoon and serve on hot buttered toast.</p>
<p><b>Scrambling:</b> beat the eggs well; add salt, pepper to taste and a dash of milk. Melt enough butter to cover the bottom of a small pan. Cook the eggs slowly, stirring constantly. Cook in a basin floating on boiling water, if you&#8217;d rather. Serve when almost completely set, in about 5 minutes.</p>
<p><b>Fried Eggs:</b> Melt enough fat to easily cover the bottom of a shallow pan. Tip the egg(s) in gently and fold the whites around the yolks. When the white has set, baste the yolk to your preference and remove whole with a fish slice.</p>
<p><b>Baked:</b> lightly grease a fireproof dish and slide the eggs gently into it. Sprinkle with salt, pepper and butter to taste. Bake in a medium oven and serve in the same pan after the whites have set.</p>
<p><b>Omelette:</b> buy a pan and keep it solely for omelettes! The base should be smooth and clean. Allow two eggs per person; beat lightly and add salt and pepper to taste. Heat enough butter to cover the bottom of the frying pan. When the butter is hot, pour in the eggs; as it sets, raise up the handle and draw the set mixture up towards the handle, allowing the liquid egg to run down onto the hot pan. When all the liquid is set, tilt the pan forward and roll the omelette over. Serve immediately on a hot plate. It can be filled with almost anything, before being rolled up.</p>
<p><b>Pouring Custard:</b> lightly beat 2-3 eggs for every pint of milk. Heat the milk and gradually add to the eggs; add sugar and flavouring to suit your taste; cook in a double pan or jug and hot water until the required consistency has been achieved. If it is not to be served up immediately, pour a thin layer of water onto it&#8217;s surface to stop a skin forming on top.</p>
<p><b>Baked Custard:</b> proceed as above and then pour the custard into greased dish; sprinkle with nutmeg; and place dish in water to halfway up its sides. Bake at 350 F for 35-45 mins; test by inserting a knife &#8211; it should be clean on removal.</p>
<p><b>Steamed Custard:</b> as above, but cook in a steamer or pan of boiling water. Cooking time about the same.</p>
<p><b>Custard Tarts:</b> pour pouring custard into unbaked pastry cases and bake in the oven for 40-50 minutes. A little jam can be placed at the base of the pastry case first, if desired.</p>
